Eggplant salad with tomatoes

Bake the eggplants (I baked them in the oven), let them cool and peel them and let them drain for another 5 minutes.

We clean the onion and pass it through the mincer.

Peel the tomatoes and pass them through the mincer.

Boil eggs.

We make mayonnaise from raw yolk, boiled one, mustard and oil.

Add 1 chopped boiled egg, mix all the ingredients to match the salt to taste.
